Elissa's Smoked Sausage & White Bean Soup

Ingredients
- 7 cups Northern Beans White
- 1 1/2 lbs Andouille Sausage Smoked
- 2 Diced Tomatoes (15 oz cans)
- 4 Celery Stalks Chopped
- 3 Carrots Medium Chopped
- 1 Onion Large Chopped
- 4 Garlic Gloves Minced
- 2 tbsps Dash Salt Free Italian Medley Spice Mix
- 1/2 tsp Cayenne or Hot Pepper Powder of your choice (to taste - 1/2 to 1 Tsp)
- 2 Chicken Stock Quarts
- Spinach Leaves Fresh
- 1 Baguette
Directions
Saute carrot/celery/onion in olive until crisp tender
Add sausage and cook until slightly caramelized by rendering off extra liquid.
Add garlic for 2 minutes then add spices and stir well
Put in diced tomatoes, chicken stock, and cooked beans then simmer on low for 1 to 1.5 hours
Rip fresh spinach leaves at bottom of bowl then ladle on the soup. Serve with crusty baguette and enjoy!
