Ingredients
  • 2 lbs 2 to 3 lbs Pork Butt or Sam's 2 lbs Hardwood Smoked Pitmaster Seasoned Pulled-Pork
  • 15 ozs Can White Corn (do not drain)
  • 2 cups Diced Potatoes or 14 oz Can Diced New Potatoes (do not drain)
  • 15 ozs Can Sweet Peas (do not drain)
  • 10 ozs Can Diced Tomatoes (do not drain)
  • 10 ozs Can Tomato Soup (add 3/4 can of water)
  • 18 ozs Bottle of Hickory & Brown Sugar or Honey Chipotle Sweet Baby Ray's BBQ Sauce
  • 1 Medium Onion Chopped
  • 1/2 tsp Hot Sauce to Taste (start with 1/2 Tsp)
  • 1/2 tsp Salt to Taste (start with 1/2 Tsp)
  • 1/4 tsp Pepper to Taste (start with 1/4 Tsp)
  • 1 tbsp Worcestershire Sauce to Taste (start with 1 Tbsp)
  • 1 Chipotle Pepper in Adobo Sauce (finely chopped or food processed)
Directions

1. Place pork butt in slow cooker.  Cover and cook on low 6-8 hours. (if using Sam's cooked pulled pork, warm up in the slow cooker)

2. Remove pork butt from bone and shred.  (if using Sam's cooked pull pork, separate and shred as needed)

3. Saute onions until slightly carmelized

4. Add chipotle pepper with sauce to carmelized onions and thoroughly mix

5. Combine all ingredients in slow cooker.  Cover.  Bring to a boil on high.

6. Reduce heat to low and simmer for 30 minutes.

7. Serve with cornbread (I prefer cornbread with jalepenas) or crusty bread
