Blanc du Bois is a hybrid white grape varietal that has found a home in Texas. We express our Blanc du Bois as a dry-style wine with distinctive floral notes, and tastes of rich tropical fruit, apricot, and citrus on the finish. Our grapes come from Tara Vineyard, just outside of Athens, Texas.

Chalk Hill is defined by its warm climate and volcanic white ash that characterize its soils and give it its name.  Our Chardonnay reflects that warmth and the moderating evening coolness that allows this wine to fully develop and express itself with perfume nose and hints of citrus, green apple, and pear.  We age our Chardonnay sur lie (on light lees) in French Oak barrels for complexity, structure and smooth overall mouthfeel.

Roussanne, originating from the Rhone Valley, has found a home in the Texas High Plains. Our Roussanne produces a distinctively rich white wine with wonderful aromatics reminiscent of tropical fruit, pineapple and honeysuckle.  The palate is equally rich with hints of citrus, Mandarin orange, grilled nectarines and a light acidity.

The grapes for our Viognier come from Martha’s Vineyard in the heart of the Russian River AVA.  This idyllic setting is perfect for allowing Viognier to fully develop both aroma and richness with floral, honeysuckle, jasmine nose and delicate apricot, passion fruit, and melon on the finish.

Viognier is a Rhone varietal that has found a home in the Texas High Plains.  Our Viognier is a full-bodied white wine with distinctive floral aromas reminiscent of jasmine, honeysuckle and a hint of vanilla.  The palate is lush with rich tastes of pear and melon.

We age our Cabernet Sauvignon in both new and older French oak to allow proper maturation and complexity.  Our Cabernet Sauvignon is rich with dark fruit and hint of bell pepper on the nose.  The black cherry, black currant, leather, and tannin melt over the palate.

Palacios Vineyards, south of Brenham, Texas, has a rich history of growing Vinifera in the difficult Texas climate.  Texas Merlot is an example of the hand-tended care that Merlot requires to bring out the best in this varietal.  Smooth with integrated oak, a hint of smoke, plum and dark fruit, you will find this Merlot to be both light and refreshing.

Our Pinot Noir grapes come from Windsor Oaks Vineyard, just south of Healdsburg, California.  This vineyard splits itself between Russian River and Chalk Hill with the Pinot growing on the mid-elevation vineyard blocks.  Our Pinot Noir has a rich aromatic nose full of black fruit, cassis, hints of leather, tobacco, and brooding earthy notes.  We aged our Pinot in both new and older French Oak barrels that allow the wine to breath and mature gracefully, rounding out the complexity of the wine.

Sangiovese is an Italian grape that has found a home in Texas.  Our Sangiovese is harvested from Bingham Family Vineyards in the wind-swept Texas High Plains.  We age our Sangiovese in French Oak for nine months to allow the wine to mature gracefully and round out its earthiness and complexity.  This reveals the fresh fruity flavors of tart cherry and spice with a hint of strawberry on the nose, and medium tannins.

Our Zinfandel comes from Windsor Oaks Vineyard, just south of Healdsburg, California. This vineyard splits itself between Russian River and Chalk Hill with the Zinfandel growing on the lower vineyard blocks. The last several years, the Sonoma region experienced significant drought resulting in dense clusters with intense dark fruit and pepper flavors that hold hints of leather and smoke. We age our Zin in both new and older French Oak barrels for an overall smooth and well-rounded finish.
