2016 Cabernet Sauvignon Calistoga
We age our Cabernet Sauvignon in both new and older French oak to allow proper maturation and complexity. Our Cabernet Sauvignon is rich with dark fruit and hint of bell pepper on the nose. The black cherry, black currant, leather, and tannin melt over the palate.
The Calistoga AVA is located in the northern portion of California’s Napa Valley. The appellation is distinguished by its rich volcanic soil, temperatures of up to 100 °F (38 °C) during the day, and cool nights during the growing season due to breezes from the Russian River. Often, diurnal temperature variation can be as much as 50 °F. The area is noted for its topographical diversity and uniform geology, with bedrock almost exclusively made through volcanic action. The hot days provide color and flavor in the wines, while the cool nights help to maintain acidity and structure.

Our Cabernet Sauvignon was fermented on the skins for three weeks before pressing into old French Oak barrels for malolactic fermentation. Post-malo, we racked the Cabernet into both new American and French Oak Barrels to allow the wine to mature as well as soften the intense tannins that are known in Calistoga Cabernet Sauvignons.
